The first suggestion I found when searching was to enable the "Graphics > Emulate a virtual desktop" via winecfg which I've done but it doesn't seem to have any impact whatsoever when launching these programs. Most of these programs are 90s legacy games that don't have a native windowed mode. I have been trying to get Wine on macOS to open programs into a window on my desktop as opposed to launching and taking over the entire display.
